Serves: 2-4

Prep:

  • 1 cup Purple Thai Rice (prepared as directed)
  • 4 Persian cucumbers quartered lengthwise and sliced crosswise 1/4 inch thick
  • 1 bunch scallions, thinly sliced
  • 1 Medium sized Mango, Diced
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons grated lemon zest
  • 2 teaspoons fresh lemon juice
  • 1 Tbs Arawak Farm Mango Pineapple Pepper Sauce

Method:

Combine all and toss. Add more olive oil and pepper sauce to taste.

Great side or main course for lunch or dinner.
