Purple Thai Rice Quick Salad
Serves: 2-4
Prep:
- 1 cup Purple Thai Rice (prepared as directed)
- 4 Persian cucumbers quartered lengthwise and sliced crosswise 1/4 inch thick
- 1 bunch scallions, thinly sliced
- 1 Medium sized Mango, Diced
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons grated lemon zest
- 2 teaspoons fresh lemon juice
- 1 Tbs Arawak Farm Mango Pineapple Pepper Sauce
Method:
Combine all and toss. Add more olive oil and pepper sauce to taste.
Great side or main course for lunch or dinner.
